What you’ll need:

3 peaches, cut into bite-sized pieces
1/4 teaspoon salt
1 cup of basil leaves, fresh and torn
1/8 teaspoon of black pepper
2 teaspoons of olive oil
8 ounces of fresh mozzarella cut into one-inch pieces
How to make it:

Combine mozzarella, basil and peaches in a large bowl. Sprinkle with pepper and salt and drizzle with olive oil, tossing to coat. Serve at room temperature or refrigerate if you prefer to serve it cold.

2 cloves of garlic, thinly sliced
4 peaches, pitted and peeled

1/2 sweet onion, cut in wedges
4 teaspoons of cider vinegar
2 cans of chopped green chilies (4 oz)

How to make it:

Place peaches, tomatoes, onions, cilantro, and garlic in a food processor, pulsing until chopped coarsely. Add the rest of the ingredients (except tortilla chips), continuing to pulse until ingredients are blended. Place in a serving bowl and chill until ready to serve.

How to make it:

Combine sugar, lemon juice, raspberries, and peaches in a large bowl. Allow the fruit to sit for 20 minutes, tossing only once. Place scoops of ice cream into glasses or bowls. Top with the peach and raspberry mixture. Serve immediately.
