Fall is in the air! At our apartments in Atlanta, our residents love to celebrate the changing season by cooking flavorful, healthy meals. Get inspired by these fall recipes ideas from our Atlanta apartment community. 

Brown Butter Pumpkin Pasta 

Roasted pumpkin, sage, parmesan cheese, and brown butter make weeknight pasta anything but boring. To make this dish, melt a stick of butter with one bunch of sage leaves and let it continue to cook until it smells nutty and turns pale brown. Leave this aside while you roast pumpkin or butternut squash at 400 degrees until browned, 20-30 minutes. Cook pasta and toss with the pumpkin and brown butter sage sauce, then top with cheese.  

Rosemary Chicken Sheet Pan Supper

Dress up chicken by roasting it with lemons, rosemary, potatoes, and mushrooms in a sheet pan supper you will return to time and again. To make this dish, parboil baby potatoes for 8 minutes while you brown a package of chicken breasts on the stove. Spread the browned chicken on a sheet pan with the boiled potatoes, a package of diced mushrooms, two springs of rosemary, one chopped garlic clove, a splash of olive oil, and the juice from two lemons. Cook, stirring occasionally, until the chicken cooks through, which should take 20-25 minutes. 

Goat Cheese and Roasted Beet Salad 

This simple salad is easy to make for a potluck and never disappoints. Peel and dice one bunch of beets (caution – you might want to wear disposable gloves since red beets will stain your fingers). Toss the beets with olive oil, salt, and pepper and roast your chopped beets in the oven at 400 degrees until they are crispy. While the beets cool, make a salad with baby lettuce, fresh goat cheese, and toasted pecans. Add in the diced beets, top with olive oil and balsamic vinegar, and serve. These ingredients make a classic goat cheese and roasted beet salad, but our residents often switch it up based on what they've got in the fridge.
